Recipe: The Confused Cookie
A cookie? But is it sweet or savoury? Try this confused cookie next time you need an energy hit!

Am I sweet savoury? Or savoury sweet? The confused cookie is the perfect blend of sweet and savoury. But I’m not sure if I was aiming for a cookie or patty. Try these before you judge. The idea behind the confused cookie is to satisfy and nourish your body in the afternoon. There are plenty of us out there that have hectic work days and want to be able to hit the trails or gym (or whatever activities take your fancy) afterwards. Nourishing our bodies is one way of ensuring we can do that regularly and consistently.
What’s Great About Them?
The combination of ingredients, although it may seem a little weird at first, has a purpose;
· High in plant based proteins
· Packed with vitamins and minerals for energy production and to support muscle function
· High in fibre to keep you fuller for longer and for a healthy digestive tract
· Good source of slow release carbohydrates to maintain energy and brain function.
Hemp seeds are rich in healthy fats and essential fatty acids. They are also a great protein source and contain high amounts of vitamin E, phosphorus, potassium, sodium, magnesium, sulphur, calcium, iron and zinc. Try adding these little beauties to your cereal or smoothies. Enjoy these vegan friendly cookies.

Ingredients – makes 10 cookies
· 1 can chickpeas, drained and rinsed.
· 2 tablespoons hemp seeds
· 2 tablespoons cacao nibs
· 1 ripe banana
· 3 teaspoons vanilla extract
· 1 tablespoon peanut butter (crunchy)
· 1 tablespoon currants
Directions
1. In a mixing bowl big enough for all ingredients, mash the chickpeas.
2. Add the banana and mash.
3. Add the rest of the ingredients and combine.
4. Heat a non-stick frying pan. Using a desert spoon, add spoonful of mixture to the pan and flatten.
5. Cook on low heat for 5 minutes each side. Set aside to cool
