Quick, easy and so nutritious. These fritters are loaded with antioxidants and anti-inflammatory ingredients to revitalise and energise your immune system.

Ingredients
- 3 zucchinis (grated)
- 3 carrots (grated)
- 3 eggs
- 3 cloves garlic
- Good chunk of ginger
- Good chunk of fresh turmeric (you could also use a mix of fresh and powder)
- Salt and pepper
Note: a couple of really delicious additions are fetta or haloumi cheese and peas (fresh or frozen).
Method
1. Mix all ingredients in a bowl.
2. Heat a non-stick frying pan.
3. Roll the fitters into golf ball size and cook until golden brown on each side.
Note: If you make your fritters too big they will be harder to keep together. The quantity you make will depend on the size of your vegetables.
Serving suggestions:
